C&rsquo;est pourquoi il faut utiliser pour pr\u00e9parer une p\u00e2te de la farine de bl\u00e9, de pr\u00e9f\u00e9rence riche en gluten afin que la p\u00e2te monte bien et que le pain obtenu soit bien a\u00e9r\u00e9.<\/span>\r\n<h2 class=\"wg-translation\">La maille de gluten<\/h2>\r\n<p class=\"wg-translation\">Lors de la pr\u00e9paration, vous devez vous assurer que le gluten pr\u00e9sent dans la p\u00e2te forme des mailles. Ce maillage sert de paroi et contient les bulles d&rsquo;air (le dioxyde de carbone) qui se forment pendant la fermentation dans la p\u00e2te, ce qui donne un pain a\u00e9r\u00e9. Les mailles de gluten se forment lors du p\u00e9trissage. Lorsque la p\u00e2te est malax\u00e9e, les prot\u00e9ines forme un maillage : le gluten. Des petits liens se tissent assez rapidement et si vous arr\u00eatez de p\u00e9trir vous obtiendrez un pain qui l\u00e8vera peu. Si le temps de p\u00e9trissage est plus long, les mailles de gluten qui se formeront seront plus forts. En allongeant le temps de p\u00e9trissage, les maillons faibles sont bris\u00e9s et de nouveaux maillons plus solides se forment. C&rsquo;est ce processus qui rend la p\u00e2te plus ferme lorsqu&rsquo;elle a \u00e9t\u00e9 malax\u00e9e plus longtemps et il est beaucoup plus facile d&rsquo;obtenir ce r\u00e9sultat avec l&rsquo;aide d&rsquo;un Assistent.<\/p>\r\n<p class=\"wg-translation wg-translation-hover\">Une des qualit\u00e9s de l&rsquo;Ankarsrum Assistent est sa fa\u00e7on unique de p\u00e9trir la p\u00e2te et de cr\u00e9er des mailles de gluten solides. L&rsquo;ajout de farine \u00e0 diff\u00e9rentes \u00e9tapes a pour inconv\u00e9nient de ne pas p\u00e9trir de fa\u00e7on homog\u00e8ne, ce qui donne des mailles irr\u00e9guli\u00e8res.<\/p>\r\n\r\n<h2 class=\"wg-translation\">Quand la p\u00e2te est-elle pr\u00eate ?<\/h2>\r\nUne astuce que vous pouvez utiliser pour v\u00e9rifier si la p\u00e2te est bien malax\u00e9e est de pincer un morceau de p\u00e2te et de tirer l\u00e9g\u00e8rement. Si la p\u00e2te est pr\u00eate, elle est souple et se tient, elle doit \u00eatre \u00e9lastique et un peu \u00ab\u00a0dure\u00a0\u00bb. Si elle n&rsquo;est pas encore pr\u00eate, la p\u00e2te se cassera tout de suite et sera beaucoup moins souple un peu comme de l&rsquo;argile. Si cela se produit, p\u00e9trissez encore un peu \u00e0 la main.\r\n<p class=\"wg-translation\">Au contraire si la p\u00e2te est d\u00e9j\u00e0 bien \u00e9lastique mais que vous continuez \u00e0 la p\u00e9trir, vous risquez de briser les liens solides qui se sont form\u00e9s. La p\u00e2te perd alors de son maintien.
