{"id":6960,"date":"2022-03-30T15:03:05","date_gmt":"2022-03-30T15:03:05","guid":{"rendered":"https:\/\/www.ankarsrum.com\/fr\/?p=6960"},"modified":"2022-03-30T15:03:05","modified_gmt":"2022-03-30T15:03:05","slug":"hydratation","status":"publish","type":"post","link":"https:\/\/www.ankarsrum.com\/ca-fr\/hydratation\/","title":{"rendered":"Hydratation"},"content":{"rendered":"Le taux d\u2019hydratation c\u2019est \u00e0 dire la proportion d\u2019eau dans la p\u00e2te lors de la fabrication du pain d\u00e9pend des qualit\u00e9s d\u2019absorption de la farine.\r\n\r\nSelon la composition de la farine et sa teneur en amidon et en prot\u00e9ines, elle absorbera plus ou moins facilement le liquide.\r\n\r\nC\u2019est un point important parce que si votre p\u00e2te \u00e0 pain contient trop ou pas assez d\u2019eau vous n\u2019obtiendrez pas un r\u00e9sultat satisfaisant.\r\n\r\nChaque type de farine a une capacit\u00e9 d\u2019absorption diff\u00e9rente difficile \u00e0 estimer lorsqu\u2019on l\u2019utilise pour la premi\u00e8re fois. Cependant en versant une eau bouillante sur la farine, on peut am\u00e9liorer sa capacit\u00e9 d\u2019absorption.\r\n\r\n&nbsp;\r\n\r\n<u>Haute Hydratation<\/u>\r\n\r\nLa farine \u00e0 haute absorption comme la farine de bl\u00e9 est plus collante et plus difficile \u00e0 travailler. Le r\u00e9sultat sera meilleur si la p\u00e2te est p\u00e9trie longtemps dans le robot. La p\u00e2te fermentera plus rapidement.\r\nPlus l\u2019hydratation est \u00e9lev\u00e9e, plus le pain est a\u00e9r\u00e9 avec une croute fine et croustillante.\r\n\r\n&nbsp;\r\n\r\n<u>Calcul de la quantit\u00e9 d\u2019eau<\/u>\r\n\r\nPour calculer la quantit\u00e9 d\u2019eau n\u00e9cessaire pour un pain, multipliez la quantit\u00e9 de farine par le pourcentage d\u2019hydratation souhait\u00e9.\r\nPar exemple, si vous souhaitez faire un pain avec un taux d\u2019hydratation \u00e0 75 % et que vous utilisez 500 g de farine, multipliez la quantit\u00e9 de farine par 0.75 (soit 0.75&#215;500=375 grammes de liquide).\r\n\r\nSi vous avez une recette de pain et que vous souhaitez connaitre le pourcentage d\u2019hydratation, vous pouvez le calculer en divisant la quantit\u00e9 de liquide par la quantit\u00e9 de farine. Cela permet d\u2019ajuster la recette en fonction de la quantit\u00e9 de p\u00e2te souhait\u00e9e.\r\n\r\nExemple : si dans une recette vous avez 500 g de farine et 400 g de liquide le pourcentage d\u2019hydratation se calcule comme suit : 400\/500= 0.8 soit 80 % de liquide.\r\n\r\nIl faut comptabiliser dans le liquide tout ce qui contient de l\u2019eau y compris les \u0153ufs et le beurre.\r\n\r\n<u>Double hydratation: <\/u>\r\n\r\nCela consiste \u00e0 ne mettre qu\u2019une partie du liquide au d\u00e9part de la pr\u00e9paration et d\u2019ajouter le reste \u00e0 la fin.
