Denne type mel er n\u00f8dvendig, n\u00e5r du laver dej med g\u00e6r i. Under \u00e6ltning, bliver protein (gluten) tr\u00e5dene udviklet til at g\u00f8re dem str\u00e6kbare og elastiske.
