Precalienta el horno a 100\u00a0\u00b0C.\r\n2. Coloca en la amasadora Ankarsrum el bol met\u00e1lico y las varillas para montar.\r\n3. Derrite el chocolate negro al ba\u00f1o mar\u00eda o en el microondas.\r\n4. Monta las claras a velocidad baja y ve aument\u00e1ndola poco a poco. M\u00f3ntalas hasta que est\u00e9n espumosas.\r\n5. Poco a poco, agrega el az\u00facar y sigue montando hasta tener un merengue brillante con picos firmes.\r\n6. Roc\u00eda el merengue con el chocolate y, con cuidado, remu\u00e9velo con movimientos envolventes unas cuantas veces, justo hasta que el chocolate empiece a repartirse por las claras. No remuevas en exceso o se deshinchar\u00e1.\r\n7. Cubre una bandeja con papel de horno y reparte encima el merengue en 6 mont\u00edculos uniformes, deja un par de cent\u00edmetros de separaci\u00f3n entre ellos.\r\n8. Cuece los merengues a media altura durante 2 horas o hasta que est\u00e9n secos al tacto.\r\n9. Apaga el horno, entreabre la puerta y deja que los merengues se enfr\u00eden dentro poco a poco.\r\n10.
