- 12 egg whites
- 1 tsp vinegar
- 360 g sugar
- 240 g icing sugar
- 1 tbsp vanilla sugar
When baking for a party you need a beater bowl that can handle a big batter. With the Ankarsrum beater bowl and balloon whisks you can make meringue with up to 20 egg whites at the same time. Here is a recipe with 12.
Assemble the assistent with beater bowl and balloon whisks.
Whisk egg whites and vinegar to a white foam.
Add the sugar during whisking (a little at a time)
Whisk for a couple of minutes to dissolve the sugar.
Add icing sugar and vanilla sugar and whisk so that you have a thick meringue batter
The bowl must be able to turn upside down.
Pipe the meringue batter on a baking sheet paper and bake at 100 °C (212 °F).
The baking time depends on the size of the meringue but small once needs about 40 minutes. If you make it a little bigger then at least an hour is required.
For a pavlova calculate at least 2 hours.
