Ce type de farine est indispensable pour faire de la p\u00e2te avec de la levure. Au cours du p\u00e9trissage, les mailles de prot\u00e9ines (gluten) sont d\u00e9velopp\u00e9es, ce qui les rend extensibles et \u00e9lastiques. Au cours de la lev\u00e9e de la p\u00e2te, les gaz produits par la levure sont pi\u00e9g\u00e9s par la p\u00e2te extensible et celle-ci monte avec ces gaz. La farine \u00e0 pain peut aussi \u00eatre utilis\u00e9e dans des recettes comme les g\u00e2teaux et les biscuits, mais vous remarquerez peut-\u00eatre que la texture est plus dense que vous ne le souhaiteriez.<\/p>\r\n<p class=\"wg-translation wg-translation-hover\">Pour la mouture de vos propres graines pour la farine de pain de bl\u00e9 entier, utilisez un bl\u00e9 &#8220;dur&#8221;, car ce type de grain sera plus riche en prot\u00e9ines. Les c\u00e9r\u00e9ales anciennes comme l&#8217;\u00e9peautre et le kamut contiennent aussi suffisamment de prot\u00e9ines pour faire une p\u00e2te lev\u00e9e.<\/p>\r\n\r\n<h2><strong class=\"wg-translation wg-translation-hover\">Farine tout usage ou farine AP<\/strong><\/h2>\r\n<p class=\"wg-translation wg-translation-hover\">La farine AP est faite de farine de bl\u00e9, mais elle a tendance \u00e0 avoir une teneur plus \u00e9lev\u00e9e en prot\u00e9ines et en humidit\u00e9. Cette farine peut \u00eatre utilis\u00e9e pour faire de la p\u00e2te avec de la levure, mais la p\u00e2te peut ne pas lever autant que vous le souhaitez. Cette farine peut \u00e9galement \u00eatre utilis\u00e9e dans des recettes comme les g\u00e2teaux ou les biscuits et donnera un r\u00e9sultat l\u00e9g\u00e8rement meilleur que si vous aviez utilis\u00e9 de la farine \u00e0 pain.
