Denne typen mel er n\u00f8dvendig n\u00e5r du lager deig med gj\u00e6r i. Under elteprosessen utvikles glutentr\u00e5der (protein) som gj\u00f8r deigen elastisk. Under hevingen blir gassene som gj\u00e6ren produseres fanget i den elastiske deigen og deigen heves av gassene. Mel for br\u00f8d kan benyttes til kaker og kjeks, men du kan oppleve at konsistensen blir tettere enn du \u00f8nsker.\r\n\r\nHvis du skal male ditt eget mel for br\u00f8dbaking s\u00e5 anvend &#8220;hard&#8221; hvete siden denne har h\u00f8yere proteininnhold. Hvetemel kan ogs\u00e5 brukes til kaker og kjeks, det gir et litt bedre resultat enn om du benytter mel for br\u00f8d.\r\n\r\nHvis du skal male ditt eget hvetemel kan &#8220;hard&#8221; hvete benyttes (for gj\u00e6rdeiger) eller &#8220;myk&#8221; hvete (for enklere br\u00f8d). Eldre kornsorter som spelt kan ogs\u00e5 benyttes siden det har noe h\u00f8yere fuktinnhold.\r\n<h2>Mel for baking<\/h2>\r\nMel for baking av kaker og andre bakverk har oftest h\u00f8y fuktighet og lavt proteininnhold. Siden det er mindre protein (gluten) er denne typen mel utmerket til kaker, terter og andre bakverk der man \u00f8nsker et mer luftig resultat.
