Dette betyr at gluten er noe som allerede er tilstede n\u00e5r du begynner \u00e5 forberede deigen din. Gluten i hvete produserer den beste bakekvaliteten. Disse tr\u00e5dene tjener som vegger, og holder luftboblene (karbondioksidet) som dannes under heving inne i deigen, noe som gj\u00f8r br\u00f8det luftig. Glutentr\u00e5der dannes ved \u00e5 elte og kna deigen. N\u00e5r deigen knas, dannes koblinger i proteinkjedene \/ glutenet. Et stort antall svakere tr\u00e5der dannes ganske raskt. Hvis du stopper p\u00e5 dette punktet, med svake koblinger, f\u00e5r du et br\u00f8d som ikke hever.
