I mj\u00f6l finns bland annat proteinet gluten som \u00e4r en av de komponenter som h\u00e5ller samman degen och g\u00f6r den elastisk.\r\n\r\nN\u00e4r degen kn\u00e5das bildar glutenet ett n\u00e4tverk av tr\u00e5dar som tillsammans med j\u00e4sningsmedel skapar sm\u00e5 gasbubblor.
