Pajdeg

  • 3 ½ dl mjöl
  • 3 msk kallt vatten
  • 150 g kallt smör
  • 1 tsk mortlad kummin

Fyllning

  • 4 ägg
  • 3 dl vispgrädde
  • 1 dl mjölk, 3 %
  • 300 g riven Västerbottensost
  • 1 tsk honung
  • Salt och svartpeppar efter smak

Dekoration

  • 1 burk smetana, vispad
  • Löjrom
  • Picklad rödlök
  • Hackad gräslök

Recept på västerbottenpaj

Västerbottenpaj med kummin, löjrom, vispad smetana och picklad rödlök

    Gör så här

  1. Montera assistenten med vispskål och mördegsvispar. Gör pajskalet: Lägg alla ingredienserna utan kummin och mixa på medelhög hastighet till en smulig massa, ca 3-5 minuter.

  2. Place the pie dough on a baking sheet paper. Add ground cumin, and work quickly together into a dough. Flatten and place in a bag, refrigerate for at least 30 minutes.

  3. Roll out the dough with a rolling pin into a thin base and cover a baking pan, between 22-24 centimeters. Press to the edges and notch with a fork. Put the pie crust in the freezer for at least 30 minutes.

  4. Set the oven at 200 °C (392 °F) hot air. Pre-bake the pie crust for 10-12 minutes in the middle of the oven. Then let cool slightly.

  5. Make the filling: Assemble the assistent with bowl and balloon whisks. Quickly whisk eggs, cream and milk. Add Västerbotten cheese, honey, salt and black pepper, and mix again.

  6. ll the pie crust with the filling and bake in the middle of the oven for about 30-35 minutes.

  7. Take out the pie and let it cool.

  8. Decorate the pie with whipped sour cream (Smetana), roe, pickled red onion and chopped chives.
