Ingredients
- 5 tbsp water
- 2 chia seeds
- 200 gram salted butter
- 270 gram sugar
- 150 ml oat milk
- 2 tsp baking powder
- 270 gram flour
- 3 tsp cinnamon
- 1.5 tsp ground ginger
- 1.5 tsp ground cloves
- 60 gram lingonberries

At Ankarsrum we love this time of the year. It is really a time for baking. Try this soft vegan ginger bread with lingonberries. It is delicious!

Mix water and chia seeds in a glass and let it swell.

Set oven to 175°C (350°F).

Butter and flour a baking pan.

Assemble the Assistant with beater bowl and cookie whisks.

Blend the chia mix with room temperatured butter, sugar and oat milk.

Mix the dry ingrediencies and add to the batter.

Add the lingonberries and pour the batter into the bunt pan.

Bake in the oven for about 25 minutes.

Let the cake rest before you turn it around.

Decorate with icing sugar before serving.
