Ingredients

Salad

  • 200 g (about 3 cups) red cabbage
  • 100 g (about 1 1/2 cups) carrots
  • 3 tbsp chopped fresh cilantro
  • 45 g (about 1/3 cup) chopped peanuts

Sauce

  • 1 tbsp honey
  • 1 tbsp sugar
  • 50 g (3 1/2 tbsp) neutral oil
  • 1 tbsp white wine vinegar
  • 1 lime, juice and zest
  • 3 tbsp fish sauce
  • 1 red chili
  • 2 garlic cloves
  • ยฝ red onion
  • Fresh cilantro and chopped peanuts for garnish

Asian-Inspired Chopped Salad

This salad is a bowl of crunchy, delicious goodness, with a sweet-and-savory flavor profile. Serve as a healthy side dish or as a quick weeknight dinner with grilled chicken or fish.

    Follow these steps

    1. Start with the dressing. Stir together neutral oil, honey, sugar, white wine vinegar and finely grated lime peel and lime juice in a bowl. Finely chop red onion, garlic and chili, then add to the dressing and stir.

    2. Put the assistent on its side and assemble the vegetable cutter with the slicing drum. Grate the red cabbage on medium speed. Switch to the coarse grater drum and shred the carrots at medium speed. Roughly chop cilantro and peanuts.

    3. Mix red cabbage, carrots, peanuts, and cilantro in a large bowl. Add the dressing and mix to combine. Garnish with fresh cilantro and chopped peanuts.
