The dough climbs up the sides of the bowl. What am I doing wrong?

This is most likely to happen when the dough roller is being used. When using the dough roller, you should not lock the arm (and thus the roller) straight away, but should leave it resting against the bowl as it mixes the first few ingredients together. Let the Assistent operate at low speed as it does this. Once the dough starts to get so “firm” that it starts to climb, lock the roller 2-4 cm from the edge by pulling the arm towards the middle and turning the base knob. You can then increase the speed to medium.

This is usually due to the dough being too firm and to too much flour being added. Reduce the speed and adjust the base knob. When you make dough in the Assistent, you usually need a little less flour than indicated in the recipe. So add the flour a little at a time. Also bear in mind that the dough gets firmer once the Assistent has kneaded it for a few minutes.

Sometimes you may need to help by pulling the arm towards the middle to pick up the dry ingredients. Remember not to lock the arm until the ingredients have begun to mix and the dough has started to climb up the sides of the bowl. Only then do you lock the arm.
