Ingredients

  • 200 g salted butter, room temperature
    225 g sugar
75 g treacle syrup or light molasses
    300 g all-purpose flour
    1 tsp baking soda

Here's how

  1. Preheat oven to 200 °C (390 °F).
  2. Assemble the Ankarsrum using the Beater Bowl and the Cookie Whisks.
  3. Add the butter and sugar and mix on low speed until combined.
  4. Add the treacle syrup (or molasses), flour and baking soda. Mix on medium speed until a smooth dough forms.
  5. Divide the dough into three equally sized pieces. Roll each piece 14 inches long.
  6. Put the rolls on a baking sheet lined with parchment paper. Flatten them slightly with a fork.
  7. Bake in the oven for about 12 minutes.
  8. Cut the lengths into 1 inch (2 cm) pieces, slightly diagonally. Don't forget to cut them while they're still hot.

Tips

  • Serve the caramel cookies with vanilla ice cream and a generous drizzle of caramel sauce for a fun and indulgent dessert!
