Crêpes

Crêpes are thin pancakes that originated in France. They are an excellent way to end a dinner, or start the day – bon appétit!

Sweet bread

Tools

Balloon whisks

Ingredients

  • 150 g all-purpose flour
  • 2 tsp sugar
  • 1/2 tsp salt
  • 600 ml milk
  • 3 eggs
  • 3 tbsp salted butter

Frying

  • 4 tbsp salted butter or oil

Garnish

  • Hazelnut cream
  • Maple syrup
  • Fresh berries
  • Chopped pistachios

Here's how

  1. Assemble the Ankarsrum with the Beater Bowl and Balloon Whisks.
  2. Add flour, sugar and salt. Start the Ankarsrum at medium speed.
  3. Add 1/3 of the milk and whisk till a smooth batter forms.
  4. Add the rest of the milk as well as the eggs, and mix until all is blended.
  5. Melt the 3 tbsp butter and add it to the batter.
  6. Let the crêpe batter stand for 10 minutes to allow the flour to absorb the liquid.
  7. Heat a frying pan and add a little butter. Fry thin, round crêpes in desired size.
  8. Fold your crêpes and place on a plate, drizzle over maple syrup.
  9. Garnish with fresh berries and chopped pistachios.
  10. Serve them with a delicious hazelnut cream, or why not vanilla ice cream?
