Sourdough Starter

To bake delicious sourdough bread, you'll first need a sourdough starter. Here's a simple recipe to help you get started.

Bread

Ingredients

  • 200 ml lukewarm water (40°C), divided (2 × 100 ml)
    60 g organic strong white bread flour, divided (2 × 30 g)

Here's how

Day 1

  1. Mix 100 ml of lukewarm water (40°C) with 30 g of organic strong white bread flour in a clean glass jar with a lid. Stir until smooth, then close the lid. Place the jar in a warm spot in your kitchen where the temperature is stable and not too cold.

Days 2–3

  1. Open the lid and stir the starter once in the morning and once in the evening. Do not tighten the lid completely—leave it slightly loose to allow airflow.

Day 4

  1. Stir the starter, then discard most of it, leaving just a small amount in the bottom of the jar and on the sides. Feed the remaining starter with 100 ml of lukewarm water (40°C) and 30 g of organic strong white bread flour. Stir well and place the lid back on loosely.

Day 5

  1. Your sourdough starter should now be bubbly, active and roughly doubled in size, ready for baking. If it isn't bubbly yet, leave it for another day, move it to a warmer spot or continue feeding it once or twice more until it becomes active.
