Peel and slice apples thinly. Mix with maple syrup and set aside.
Set the oven to 175 C (347 °F)
Assemble the assistent with bowl, dough knife and dough roller.
Mix cold butter into small pieces with the rest of the ingredients until you get a fairly firm dough.
Press half of the shortcrust pastry into the bottom of the mold.
Add apple puree and place the apple slices on top. Crumble over the rest of the dough.
Bake in the middle of the oven for 25-30 minutes or until the pie has taken on color. Serve with vanilla sauce.
Assemble the assistent with beater bowl and balloon whisks.
Whisk the cream firmly.
Add remaining ingredients and whisk smoothly.
