Follow these steps
- 									Set up the Assistent Original with the bowl, dough knife, and dough roller. 
- 									Pour all the rice flour, corn flour, potato flour, and salt into the bowl, then start the assistent on low speed. 
- 									Add one egg at a time. 
- 									Move the assistent's arm towards the center a few times to incorporate all the flour, then secure the arm about 2 cm from the edge. 
- 									Transfer the dough onto a clean work surface and knead it until smooth, adding a few drops of olive oil or water if the dough feels dry. Ensure it's well-kneaded and coat it lightly with olive oil. Wrap the dough in plastic wrap and let it rest in the fridge for 30 minutes.
