- 400 ml water
- 400 ml milk
- 140 g rolled oats
- 50 g of fresh yeast (or 10 g instant yeast)
- 2 tbsp honey
- 50 g butter, room temperature
- 35 g flaxseed
- 240 g sifted rye-flour
- 480-540g wheat flour
- 2 tsp salt

Attach the bowl, dough hook, and dough knife.

Boil water and add it to the bowl along with the oats. Mix the ingredients and allow them to sit for 30 minutes.

Add the yeast and mix. If you're using instant yeast, let it sit for 10-15 minutes before mixing.

Incorporate honey, butter, flaxseed, rye flour, salt and 75% of the wheat flour.

Start the Ankarsrum Assistent on medium speed and mix for 10 minutes.

If necessary, add more wheat flour and continue mixing for an additional 5 minutes.

Cover the dough with a lid and let it rise for 60 minutes.

Grease a baking pan measuring approximately 30x40 cm (9x13 in).

Roll out the dough into a rectangular shape and place it in the prepared baking pan.

Cut the dough into squares and make small indentations.

Allow the dough to rise for 30 minutes.

Preheat your oven to 200°C (400°F).

Bake the dough in the middle of the oven for 20-25 minutes.
