Ingredients
- 2 chicken breasts
- 1 orange (juice)
- 1 lemon (juice)
- 2 tbsp olive oil
- 1 tsp honey
- 1/2 tsp salt
- 1/2 tsp black pepper
Salad
- 1 carrot
- 1/2 cucumber
- 1 red pepper
- 1/2 red onion
- 2 cups loosely packed leaf spinach
Dressing
- 1/2 cup Greek yogurt
- 1/2 clove of garlic
- 1 tsp Dijon mustard
- 1/2 tsp honey
- 1 tbsp olive oil
- 1 tbsp water
- Fresh herbs (e.g. parsley and basil)
Citrus-Marinated Chicken with Greens and Creamy Yogurt Dressing
This salad combines the fresh, tangy flavor of citrus with juicy, marinated chicken and a creamy dressing to create a refreshing, flavorful meal.

Squeeze the orange and lemon with the citrus press, mix with olive oil, honey, salt and pepper. Marinate the chicken for at least 30 minutes.
