The stainless-steel bowls for the Ankarsrum mixer is highly durable, stain resistant and food safe.
If there is residue on the inside surfaces of a new stainless-steel bowl, this can occur from the mechanical sanding and brushing of the inside of the bowl during the manufacturing process. This residue is harmless and is common to occur in stainless-steel products for kitchen use.
Ankarsrum therefor recommend cleaning the bowl before its first use to get rid of any potential harmless residue. This prevents it from creating minor black spots on the dough knife at the first uses of the stainless-steel bowl.
This black residue that can occur is not harmful and can be removed by following the advice below.
We recommend that you before use:
- Take a small amount of olive oil in the bowl and wipe it around inside the bowl.
- Let this sit in the bowl for a few minutes, and then wipe the oil out with a dry cloth.
- After removing the oil, wash the bowl with hot water and a good dish detergent.
OR, if you prefer:
- Use a mixture of lemon juice and salt, or a baking soda paste to clean the bowl.
- You will then be able to remove the residue safely.
These are booth food-safe alternatives that will clean your stainless-steel bowl if black residue occurs.

FIRST TIME USE:
Before using your Ankarsrum Clay Baker for the first time, fill the unglazed
lid with water and let it sit for 30 minutes. For subsequent uses, a 10-
minute soak is sufficient. After the long soak is complete, use a nylon
brush to loosen any clay dust particles left from the manufacturing
process from both parts of the roaster.
HOW TO CLEAN:
Allow the Ankarsrum Clay Baker to cool completely before cleaning. Use
liquid dish soap to clean the bottom, glass frit-lined section of the baker,
and plain water to clean the unglazed lid. Place the lid upside down on the
base and store in a place with good air circulation. Do not put the baker

TEMPERATURE TIPS:
The Ankarsrum Clay Baker is oven and microwave safe up to 550°F, but
cannot handle abrupt temperature changes. To avoid damaging the baker,
always start with a cold oven – never preheated. Don’t add cold
ingredients while the baker is in use. When removing from the oven, set
the hot baker on a cloth towel or wooden cutting board, never directly on
a cold countertop. DO NOT USE on the stovetop or grill
ELECTRIC OR GAS OVENS:
Always put your ingredients in the Ankarsrum Clay Baker, then place in a
cold oven before turning the heat to 375°F – 550°F.

FDA/Prop 65 tested and also passes strict European standard testing. Our
bakers come with a safety-tested glass frit glaze on the inside of the
bottom section for easy cleaning.
SHOULD I BASTE DURING COOKING?
The principle of clay cooking is very simple; the steam does the work! A
properly soaked clay baker releases the captured water and creates a
blanket of steam during cooking. This ensures succulent textures and
intense flavors.

WILL MY CLAY BAKER SHOW STAINS OR SEASONING?
The more you use your clay baker, the more the lid and base will become
seasoned which will change its surface appearance over time. This can
include spots, stains and hairline cracks in the glaze. These marks are a
