How to Attach Ankarsrum Pasta Accessories
Turn the Assistent onto its side before attaching
The Ankarsrum Assistent Original is a multifunctional machine designed to operate in two positions. To use any of the Pasta Accessories, the machine must be turned onto its side. Lift the Assistent using both handles and rotate it so that the motor arm faces straight upwards. It is now ready to be fitted with a Pasta Accessory.
Attach the Pasta Accessory
1. Place the Pasta Accessory against the drive socket
2. Rotate it until you hear a clear click
3. Start at a low speed
4. Feed in small pieces of dough
5. Roll until you reach the desired thickness

Three Tips for the Best Pasta Dough
Let the Dough Rest
A good dough needs time to rest. Allow your pasta dough to rest for at least 30 minutes so the gluten can relax, creating a softer, more elastic texture. This makes rolling easier and results in a smooth, even finish you’ll notice in every bite.
Roll in Stages
As with any craft, the best results come from taking things step by step — and rolling pasta dough is no different. Start at the thickest setting and gradually work your way down to thinner settings. Fold the dough, roll again, and notice how it becomes more even with each pass. This method creates an elastic, resilient dough that holds together beautifully, whether you’re making lasagne sheets, fettuccine or ramen noodles.
The Right Flour Makes a Difference
The flour you choose affects the flavour, texture and mouthfeel of your culinary creations. Whether you’re making pasta or dumplings, selecting the right flour enhances both taste and texture.
- 00 flour creates classic, silky pasta that melts in your mouth.
- Durum flour adds a fantastic bite and is ideal for defined shapes such as spaghetti and fettuccine.
- Bread flour is excellent for noodles and dumplings, where a smooth, elastic and slightly chewier dough is desired.
