Ingredients

  • 2 chicken breasts
  • 1 orange (juice)
  • 1 lemon (juice)
  • 2 tbsp olive oil
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Salad

  • 1 carrot
  • 1/2 cucumber
  • 1 red pepper
  • 1/2 red onion
  • 2 cups loosely packed leaf spinach

Dressing

  • 1/2 cup Greek yogurt
  • 1/2 clove of garlic
  • 1 tsp Dijon mustard
  • 1/2 tsp honey
  • 1 tbsp olive oil
  • 1 tbsp water
  • Fresh herbs (e.g. parsley and basil)

Citrus-Marinated Chicken with Greens and Creamy Yogurt Dressing

This salad combines the fresh, tangy flavor of citrus with juicy, marinated chicken and a creamy dressing to create a refreshing, flavorful meal.

Food
  1. Squeeze the orange and lemon with the citrus press, mix with olive oil, honey, salt and pepper. Marinate the chicken for at least 30 minutes.

  2. Grill or pan-fry the chicken and cut it into slices.

  3. Slice the vegetables with the vegetable cutter.

  4. Mix the dressing in the blender and drizzle over the salad.

  5. Place the chicken on top and serve.
